Nut Butter Maniac

Hello everyone,

I have decided to post something different this time. I would like to share some of my favorite recipes using nut butters. I always have Munch Life nut butters in my kitchen so when it's time to get a snack I get the best tasting snack!

Macadamia butter French Toast

1 egg

1 teaspoon Pure Vanilla Extract

1/2 teaspoon ground cinnamon

1/4 cup milk

4 slices bread

Top it with blueberries, bananas, walnuts and of course Macadamia Butter or Tropical Nut Butter by Munch Life. My favorite way to have French Toast!

Blended Nut Butter Coffee

Hello, happy start to the day! I love this blended nut butter coffee. You can use any of the nut butters for this coffee. My favorite to use - Vanilla Almond Latte, Tropical Nut, Macadamia Nut and Chocolate Almond. Nutty roasted butters that mixes with the coffee and rises to new levels of deliciousness.

I don't know if I can call it a recipe since it couldn't be any more simple. Just use your already brewed coffee and add some:

  • Coconut oil

  • Your choice of nut butter

  • Collagen (optional)

I don't use any sweeteners, but if you feel like it use some maple syrup!

And blend your latte until it is frothy.

If you're a cinnamon person, sprinkle some on top. Now relax and enjoy :)

Copycat Ricotta pancakes

I’m really bad at making pancakes. Seriously, I have tried a dozen recipes probably. My little sister has been making these for a while now and was telling me how delicious they are. So finally I decided to give them a go because every time I see her posting photos of these pancakes on Instagram I get really jealous. I was really hoping I won't mess them up.

There we go:

  • 2 eggs

  • 250g ricotta cheese

  • 1 glass(~150g.) spelt flour (it was recommended, I didn't have spelt four so I used a regular one, worked just fine)

  • 1-2 tbsp of coconut sugar (or brown sugar)

  • 2/3 (~200ml) glass of milk ( I used almond milk)

  • 1/2 tea spoon of baking powder

  • pinch of salt

  • tea spoon of vanilla extract

  • coconut oil or ghee butter for cooking

Mix dry ingredients together, separate yolks from whites. In a separate bowl mix ricotta cheese, yolks, milk and vanilla extract. Then slowly mix in dry ingredients. Whipped egg whites for fluffier pancakes. Fold them into your batter.

Brush a large nonstick skillet or griddle with butter and heat over medium-low heat. Pour as many medium-sized pancakes as space permits, and cook until golden on the bottom, about 3 minutes. Flip and cook until golden on the bottom, about 2 more minutes.

Sprinkle with powdered sugar to finish.

I had them with raspberry jam and Macadamia Nut Butter. It was the perfect weekend breakfast just when I needed a little bit of comfort.

Tropical Nut Butter Chia Pudding :

This is a really easy recipe, for a creamy, satisfying and loaded with protein, fiber and omega-3s breakfast!

Simply stir together your chia seeds and milk in a mason jar or bowl. I normally do 3 Tablespoons of chia seeds to 1 cup of liquid. Once the chia pudding mixture is well combined, let it sit for few minutes, then stir to break up any clumps of chia seeds, cover and leave the mixture in the fridge for 2 hours or overnight. Easy!

Hemp hearts Breakfast Bowl

Hemp hearts or hemp seeds are a great source of omega-3 fatty acids, protein, fiber, iron, zinc etc. I sometimes add it to my breakfast bowls for a complete protein source.

  • Any type 1/2 cup coffee crema yogurt/yogurt ( I use Olympic Krema Cafe Latte)

  • Any nuts or granola, even rolled outs if you prefer

  • Strawberries

  • Half banana

  • 2 tbsp spoons MUNCH Vanilla Latte Nut Butter And Macadamia butter

Sprinkle over some hemp hearts. Enjoy!

In the comfort of your own home enjoy these easy and delicious recipes!

Thanks for reading!
